Ingredients
  

  • 2 large chicken breasts (boneless, skinless)
  • 1 tbsp olive oil
  • 1 tbsp chipotle seasoning or 1–2 chopped chipotle peppers in adobo
  • Salt and black pepper to taste
  • ½ cup ranch dressing
  • 1 cup shredded lettuce
  • 1 cup cooked rice (optional)
  • ½ cup shredded cheddar or Mexican blend cheese
  • 1 tomato, diced
  • 4 large flour tortillas
  • Optional: avocado slices, jalapeños, sour cream

Instructions
 

  • Season Chicken:Coat chicken with olive oil, chipotle seasoning (or chopped chipotle peppers), salt, and pepper.
  • Grill Chicken:Grill on a hot skillet or grill pan for 5–6 minutes per side until cooked through. Let rest, then slice thinly.
  • Assemble Burritos:Warm tortillas slightly. Spread a spoonful of ranch in the center, then layer with lettuce, rice, grilled chicken, cheese, tomatoes, and any extras.
  • Roll & Grill:Fold burrito-style. Grill seam-side down in a pan for 1–2 minutes to seal and crisp. Flip and toast the other side.
  • Serve:Cut in half, serve warm, and enjoy with extra ranch or salsa!
