Sauté Sausage & Veggies: Heat olive oil in a skillet over medium heat. Add sliced chicken sausage and cook until browned (about 3–4 mins). Add onion and garlic, sauté 2 minutes.
Cook Orzo: Stir in the orzo and toast for 1–2 minutes. Add chicken broth, bring to a boil, then reduce heat and simmer uncovered for about 10 minutes, stirring occasionally.
Make it Creamy: When orzo is tender and most liquid is absorbed, stir in the heavy cream, Parmesan, and spinach (if using). Cook for 2–3 more minutes until creamy.
Season & Serve: Add salt, pepper, and red pepper flakes to taste. Garnish with parsley and serve warm!
