Ingredients
  

  • Chicken Breasts
  • Olive Oil (or vegetable oil)
  • Salt and Pepper
  • Cornstarch
  • Garlic Powder
  • Mayonnaise – about ½ cup
  • Sweet Chili Sauce
  • Sriracha
  • Honey
  • Rice Vinegar
  • Rice (white, brown, or jasmine) – 2 cups cooked, or noodles if preferred
  • Shredded Carrots
  • Cucumber
  • Red Cabbage
  • Avocado
  • Scallions (Green Onions)
  • Sesame Seeds
  • Cilantro
  • Lime Wedges

Instructions
 

  • Cook Chicken: Season and pan-fry or bake the chicken until fully cooked.
  • Make Sauce: Mix mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar to make the Bang Bang sauce.
  • Prepare Rice/Noodles: Cook rice or noodles as the base.
  • Prep Veggies: Slice cucumber, shred carrots and cabbage, and slice avocado.
  • Assemble: Place rice/noodles in a bowl, top with veggies, sliced chicken, and drizzle with Bang Bang sauce. Garnish with cilantro, scallions, sesame seeds, and lime.
