Ingredients
  

  • 1 lb boneless, skinless chicken breast or thighs (cut into cubes or strips)
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 cup BBQ sauce
  • 2 tbsp honey
  • 1 tsp hot sauce (optional for a kick)
  • 2 cups cooked white or brown rice
  • Optional toppings: corn, shredded cheese, green onions, avocado, pickled onions, cilantro

Instructions
 

  • Cook Chicken: Season chicken with salt, pepper, garlic powder, and paprika. Cook in a skillet over medium heat with olive oil until golden and cooked through (6–8 minutes).
  • Add Sauce: In a bowl, mix BBQ sauce with honey and hot sauce. Pour over the cooked chicken in the skillet, stir well, and let it simmer for 2–3 minutes until sticky and glazed.
  • Assemble Bowl: Add rice to serving bowls. Top with the honey BBQ chicken and your favorite toppings.
  • Serve: Drizzle extra sauce or honey on top if desired and serve warm!
