Instructions
Cook the Chicken: In a bowl, mix chicken with olive oil, lime juice, and spices. Sauté in a skillet over medium heat for 6–8 minutes until fully cooked and browned.
Make Street Corn: In a separate bowl, combine corn, mayo, sour cream, spices, cilantro, lime juice, and cheese. Mix until creamy and well coated.
Assemble the Bowl: Add rice to bowls, top with cooked chicken and street corn mixture. Add your favorite toppings like avocado or jalapeños.
Serve: Garnish with extra lime juice and cilantro if desired. Serve warm and enjoy!
