Ingredients
  

  • 1 lb boneless, skinless chicken breast or thighs, diced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Juice of 1 lime
  • 2 cups corn (fresh, canned, or frozen)
  • 2 tbsp mayo
  • 1 tbsp sour cream or Greek yogurt
  • 1/2 tsp chili powder
  • 1/4 tsp garlic powder
  • 2 tbsp chopped cilantro
  • 1/4 cup cotija or feta cheese
  • Juice of 1/2 lime
  • 2 cups cooked white or brown rice

Instructions
 

  • Cook the Chicken: In a bowl, mix chicken with olive oil, lime juice, and spices. Sauté in a skillet over medium heat for 6–8 minutes until fully cooked and browned.
  • Make Street Corn: In a separate bowl, combine corn, mayo, sour cream, spices, cilantro, lime juice, and cheese. Mix until creamy and well coated.
  • Assemble the Bowl: Add rice to bowls, top with cooked chicken and street corn mixture. Add your favorite toppings like avocado or jalapeños.
  • Serve: Garnish with extra lime juice and cilantro if desired. Serve warm and enjoy!
