Ingredients
  

  • 2 lbs boneless, skinless chicken thighs or breasts
  • 1 cup pineapple juice
  • ½ cup brown sugar
  • ½ cup low-sodium soy sauce
  • 1 tbsp minced garlic
  • 1 tbsp cornstarch (optional, for thickening)
  • 1 cup canned pineapple chunks (drained)
  • 1 bell pepper, sliced (optional)
  • Cooked white rice (for serving)
  • Green onions & sesame seeds (for garnish)

Instructions
 

  • Prepare Sauce:In a bowl, mix pineapple juice, brown sugar, soy sauce, and minced garlic.
  • Add to Crockpot:Place chicken into the slow cooker. Pour sauce over the top. Add pineapple chunks and bell peppers if using.
  • Cook:Cover and cook on low for 5–6 hours or high for 3–4 hours, until chicken is tender.
  • Optional Thickening:If desired, mix 1 tbsp cornstarch with 2 tbsp water and stir into the sauce 15–20 minutes before serving. Let it thicken.
  • Serve:Shred or slice chicken, serve over rice, and top with green onions and sesame seeds
